how a place earns its spot

koykod is a curated shortlist, capped at 30. a place makes it on a koykod score, not on how loud it is. the score is built to be checkable: at least 70% of it comes from evidence anyone can verify, and no more than 30% from our own taste.

• consensus rating, weighted by how many people rated it (a 4.4 over 50,000 reviews beats a 4.8 over 40)
• longevity - surviving decades in a town this food-literate is its own proof
• editorial credibility - named by credible press, tourism boards, festival guides
• a signature dish worth going out of your way for
• consistency and basics - does the quality hold, is it clean enough to send a stranger
• our taste and the character of the place - the honest, capped, subjective third
